Cover and bring to a boil. Reduce the heat to a simmer and cook, stirring ocassionally, for 20 - 25 minutes, until the fruit is very tender. For a chunkier texture, mash the mixture vigorously with a fork or potato masher to break the biggest pieces. If you'd prefer a smoother consistency, transfer to a blender and thoroughly puree. Cool completely before storing in airtight containers. Makes 3 - 4 Pints (6 - 8 Cups) Notes: Applesauce can be refrigerated in an airtight container for 1 to 2 weeks. Try using ginger for a bit more of a bite, or a pinch of cinnamon for a sweetness and warmth.
