Vegan MiSOgood Soy-free Miso Sweet Potato Toast
2 Medium Sweet Potatoes
Spray Oil
2 Tablespoons MiSOgood Soy-Free Miso
Sprouts or Microgreens (Optional)
Toasted Pepitas (Optional)

Preheat your oven to 400 degrees.

Begin by thoroughly scrubbing your sweet potatoes, or peeling if you're not a fan of the skins. Slice lengthwise into 1/4-inch thick planks using a very sharp knife or mandoline. Go slowly to ensure consistency, and to be careful as the potatoes may try to roll away from you!

Transfer to a 13 x 18-inch sheet pan, spreading the pieces out in one even layer, without overlapping. Lightly spray with oil, to coat. Bake for 15 minutes before flipping. Roast or another 10 - 15 minutes, until caramelized and golden brown all over. Let cool for at least 5 minutes.

Drizzle and spread the miso to cover each piece. Top with sprouts, microgreens and/or pepitas, if desired. Enjoy warm!

Makes 2 - 4 Servings

Notes: This can also be made in an air fryer set to 370 degrees. Cook for 10 - 15 minutes total, flipping halfway through.
