MiSOgood Vegan Tofu Dengaku

1 (14-Ounce) Package Extra-Firm Tofu, Thoroughly Drained
1/2 Cup MiSOgood Brown Rice Miso

Garnishes (Optional):
Toasted Sesame Seeds
Thinly Sliced Scallions
Lemon Zest

Preheat your oven to 350 degrees and line a baking sheet with parchment paper or a silicone baking mat.

Cut the tofu in half horizontally, and then cut each half into 6 squares, yielding 12 equal squares in all. It's perfectly fine if the pieces aren't precisely square as long as they're all the same size.

Arrange tofu on your prepared baking sheet in a single layer, spaced out evenly. Bake for 10 minutes, until the edges just begin to brown. Flip and bake for another 10 minutes on the opposite side.

Remove the tofu from oven and spread the miso liberally on top of each piece. Set the broiler to high and cook on the top rack in the oven for 5 - 8 minutes, until the miso is bubbling and caramelized.

Transfer to a plate. Serve as is or skewer each square and sprinkle with sesame seeds, scallions, and/or lemon zest as desired.

Makes 2 - 4 Servings

Notes: To serve this as an entree, complete the meal with cooked brown or white rice, steamed broccoli, and a side of miso soup.
