MiSOgood Vegan Fluffy Pancakes

2/3 Cup Aquafaba
1 Cup Self-Rising Flour
2 Tablespoons MiSOgood Sweet & Savory White Miso
Vegan Butter, Fresh Berries, and/or Maple Syrup, to Serve (Optional)

Place the aquafaba in the bowl of your stand mixer with the whisk attachment installed. Whip the aquafaba on high speed for about 5 minutes, until soft peaks form. Gently fold in the flour and MiSOgod Sweet & Savory White Miso using a wide spatula, stirring as little as possible to keep the air bubbles intact. Mix until just combined.

Heat a non-stick skillet over medium heat. Lightly grease four 3 1/2-inch ring molds and place them equally spaced around the pan. When hot, divide the pancake batter between the four evenly. Reduce the heat to medium-low and cook gently for 7 - 9 minutes, until the sides have set and the bottoms are lightly browned.

Carefully remove the rings and flip the pancakes. Cook for another 5 - 8 minutes until golden brown on the opposite side.

Transfer to plates, top as desired, and enjoy hot!

Makes 4 Pancakes; 2 Servings

*Notes: To make your own self-rising flour, whisk together 1 cup of all-purpose flour and 1 1/2 teaspoons of baking powder until fully incorporated.
