Whipped Purple Sweet Potatoes
3 Pounds (About 4 Large) Purple Sweet Potatoes, Peeled and Diced
1/2 Cup Vegan Butter, Cut Into Tablespoon-Sized Pieces
1/4 Cup Sweet & Savory White MiSo Good
1/2 Teaspoon Ground Black Pepper
Fresh Parsley, Chopped (Optional)
Place the sweet potato pieces into a large pot and cover with cold water by one or two inches. Set over medium heat, cover, and bring to a boil. Cook for 15 - 20 minutes, until fork-tender. Very thoroughly drain.
Transfer the hot potatoes to the bowl of your stand mixer. Add the vegan butter, miso, and black pepper. Use the paddle attachment and slowly begin mixing to break down the potatoes. Gradually increase he speed to high, then whip for 5 - 7 minutes, until creamy and slightly fluffy. Alternately, you can use a hand mixer with the beater attachments installed.
Transfer the whipped potatoes to a serving dish and garnish with fresh parsley, if desired. Serve and enjoy hot!

Notes: For more seasonal spice, try adding 2 tablespoons dark brown sugar, 1/2 teaspoon ground cinnamon, 1/2 teaspoon ground ginger, and 1/4 teaspoon ground nutmeg
