1 Cups Dry Quinoa
3 - 4 Cups Water, Divided
1 1/2 Tablespoons Soy-Free MiSo Good
1 Teaspoon Baking Powder
Cooking Spray or Olive Oil

Place the quinoa in a medium saucepan along with 2 cups of the water and miso. Cover, bring to a boil, then reduce the heat to low. Simmer for 12 - 15 minutes until the water has been fully absorbed and the quinoa is fluffy. Let stand for 30 minutes to cool slightly.

Transfer the cooked quinoa to a high-speed blender with 1 cup of water and baking powder. Blend on full power until completely smooth. The batter will continue to thicken as it cools, so you may need to add more water to maintain a pourable consistency, especially towards the end of the cooking process.

Meanwhile, preheat your waffle iron and lightly grease with cooking spray or brush with a small amount of olive oil. Once hot, use about 1/3 – 1/2 cup of batter for each individual waffle, depending on the size of your machine. Cook for 3 – 5 minutes, until the steam dissipates, and the waffles are golden-brown. Transfer to a cooling rack or waiting plates and repeat with the remaining batter.

Serve hot, with any of your favorite toppings.

Notes: These waffles have a very neutral flavor and can be enjoyed with either sweet or savory. Ideas for sweet toppings include fresh fruit, jam, maple syrup, chocolate syrup, coconut whipped cream, coconut flakes, and more. Savory toppings could include sliced avocado, vegan cream cheese, salsa, chopped nuts, hummus, sauteed vegetables, and beyond.
